Fish Hoek is a little settlement just outside of Cape Town on the False Bay coast It is blessed with a breath taking beach, where the waves break for the first time in their previously unhindered journey from the Antarctic Backed by Table Mountain, the locals enjoy the outdoors as a way of life it is this spirit that we hope to capture in this wine.
The grapes are from the vineyards of the Breedekloof region, which produces a more tropical and fruity style of Sauvignon Blanc.
The grapes were picked at different sugar levels to get a whole spectrum of flavours The juice was handled as reductively as possible Different yeast cultures were used and fermentation took place in stainless steel tanks.
