Backed by Table Mountain, the locals enjoy the outdoors as a way of life it is this spirit that we hope to capture in this wine The grapes are from the vineyards of the Breedekloof region.
The grapes were harvested at an average of 25 B, de stemmed and crushed to stainless steel fermenters where it had 2 days of skin contact before it was fermented. Fermentation took place on the skins till dry with soft pump overs every 4 hours After alcoholic and malolactic fermentation a combination of American and French oak staves were used to give this wine its unique characteristics.
